    Agriculture: Ecological of Matallonga's own estate. Altitude 650 m. Soil: loam and limestone.

    Grape variety: Cabernet Franc 100%
    Elaboration: Native yeasts, fermentation with the delestage technique every day (from inox to the boot to lower the temperature of the wort and back to inox with a gentle ascent) until the end of fermentation.

    parenting: 12 months in third-year French oak casks and a few months of rounding in bottle before going on the market.

  • view: Tile tones that are reflected on a thick layer of coffee color.

    nose: Spices and slight menthol tones predominate. Touches of licorice and toast from aging.
